Combining
traditional ingredients and modern techniques, with an emphasis on subtle
flavour, Olivier uses the best fresh ingredients from the local region,
with menus which change frequently according to the season, including
fish of the best quality. The result is simply wonderful food, served
either in the old cloisters, or in the summer, on the colourful, shaded
street-side terrace.
Local
wines are a speciality (L’Imparfait has been a Consuls du Consulat
de la Vinée des Vins de Bergerac since 2001), and the wine list
is comprehensive enough to suit everyone’s taste.

and the arts who want to avoid the limelight are often seen in L’Imparfait
enjoying the fine regional food, safe in knowledge that they can enjoy
excellent service with complete discretion. Just this year, Dominique
de Villepin on a formal visit to Bergerac chose L’Imparfait for
a private dinner with the Mayor of Bergerac Mr Garrigue.
